My name is Branko Giljevic and I have been a custom knife maker for 35 years, I make lots of nice knives from pocket folders, hunting , fishing, kitchen knives, and tactical knives. Some priced up to $4000. Precision sharpening is the final stage on any knife and is the most important for the function of your blade, my sharpening needs to be seen to be believed! ALL are razor sharp and of shaving quality standard. I am a member of the Australian Knife Makers Guild and my web page displays many awards showing the high quality of my work.
Chances are you used knife that doesn’t seem to do what it was made to do IE CUT! When you start to cut, the knife slips on the food or twists in your hand so your cuts aren’t straight, obviously the solution is to sharpen the knife! And regain the control you need to do a nice job and a safe one too.
Do my knives need sharpening?
If you think your knives are sharp, but aren’t completely sure, here is a simple test you can do to find out. Just hold a sheet of paper away from you and try slicing some simple vertical strips.... if the knife dose not cut paper, or it snags as it’s sliced through then its time to send them to be sharpened.
Do all knives need sharpening?
Yes!!!! all knives need sharpening including serrated edges ,Remember a dull knife can be more dangerous than a sharp knife, and for the workers in hospitality industry prolonged use of dull knives can be liable under OHS.
Is my knife worth sharpening?
Yes even less expensive knives when purchased new do not perform in the sharpness test, when sharpened by me they never leave the work shop with out performing the sharpness test. After experience with my sharpening you will never use dull knife ever again, even food will taste better and look much more presentable.... ask the iron chef .
Knife edge FAULT RECTIFICATION
When a knife has been sharpened many times by workers (chefs ,cooks, house wives, butchers etc)
Sharpening has been concentrated only on the edge, eventually the blade will become chunky and will need to be thinned out. ***WHEN IT COMES TO THIS THEN IT CAN ONLY BE PERFORMED BY A PROFESSIONAL KNIFE MAKER*** This process entails bringing the edge bevel up the side of the knife much further than is typical, essentially thinning the whole blade so that it can perform at optimal efficiency. This process is time consuming and takes considerable knowledge and skill to perform efficiently. If I feel that it is necessary in the case of your knife, I will call you in advance of this procedure to be sure you are comfortable with the added cost. If thinning is recommended, the cost will be substantially less than the cost of replacing the knife and well worth the investment. This specialist edge grinding as applied to a $3000 knife made from the ground up is applied regardless of the cost, the same attention to detail and highest quality sharpening will be done to ensure the “perfect edge” to your own knife.

(For out of town customer mail shipping is easily arranged please call to discuss your requirements) TIPS for mailing knives (Australia Post only accepted): Please select an adequate sturdy carton box and individually wrap each knife in news paper and take care to overlap points and tape them so no injury or damage can be caused. For mail order Australian Postal Money order only accepted. To calculate payment amount select your knife length from the above list (measure from front of handle to the tip) and also include money to allow return shipment.
Turn around time for mail shipments, will be completed the same day as delivery, and will be dispatched the following working day (shipped via same method you sent it to us).
